Andre Chiang’s Bon Broth, ramen chain Mensho Tokyo, Spanish eatery MoVida Original to debut in S’pore

SINGAPORE – Surrey Hills Holdings, the local food and beverage group behind the popular cafe chain Surrey Hills Grocer, is branching out of cafe fare. The group will bring in three overseas concepts to Raffles City Shopping Centre, next to one of its Surrey Hills Grocer outlets. The other three locations of Surrey Hills Grocer are Ion Orchard, The Woodleigh Mall and One Holland Village. The most notable new concept is in partnership with acclaimed Taiwanese chef Andre Chiang, who runs Raw restaurant in Taipei.  He is no stranger to Singapore, as he operated the famed Restaurant Andre before it shut in 2018.  This time, he is launching a new hotpot concept called Bon Broth, which is slated for the last quarter of 2024. A similar version – called Broth by Andre Chiang – is running a pop-up at Wynn Palace’s Mizumi restaurant in Macau.  Bon Broth is set to be an elevated take on the hotpot experience, where slow-cooked broths – combining the styles of French bone broth and Chinese double-boiled soups – are in the spotlight.  Chiang, 48, calls it a “new take on our Asian dining culture and a new balanced and healthy lifestyle”. Two other concepts will launch first in July. They are ramen chain Mensho Tokyo from Japan and Spanish restaurant MoVida Original from Melbourne.  Mensho Tokyo’s Singapore debut on July 20 marks its 18th store.  Founded in 2005, the chain is also present in cities such as San Francisco, Bangkok, New Delhi and Melbourne. It is best known for its signature tori paitan (chicken broth) ramen, as well as innovative creations such as matcha ramen and lamb ramen.  In a first for the brand, the 78-seat restaurant here will offer Singapore-exclusive options and desserts.  As for MoVida Original, the 56-seat restaurant opens here on July 27. Established in 2003, the Melbourne icon – helmed by Spain-born, Australia-based chef Frank Camorra – is famed for its tapas and sharing plates using Australian ingredients to produce Spanish flavours.  The Singapore outpost will be headed by Australian chef Adrian Clemmens, the former head chef and founding team member of award-winning restaurant MoVida Original.  In March, MoVida Original did a pop-up at Surrey Hills Grocer’s One Holland Village outlet. The outlet still offers a selection of its tapas.  Then, MoVida Original and Surrey Hills Holdings’ owners had hinted at the possibility of opening an outpost in Singapore.  On bringing in the three concepts, Ms Pang Gek Teng, 36, chief executive of Surrey Hills Holdings, says: “We are constantly looking to work with like-minded partners to introduce their world-class cuisines to Singapore. “All three brands are founded by extremely talented chefs who are committed to bringing out the most amazing flavours from the simplest ingredients. Their food is thoughtful, thought-provoking and, most importantly, delicious.”
